Vancouver Island is a chef’s paradise: deep coastal water fish, shorelines brimming with shellfish, and farmlands in the interior bringing us amazing produce almost year round. Let’s take a tour or some of our favourite foods available to us here on the island, and focus on simple, fresh preparations.
