Traditional Paella is one of the most well known Spanish dishes. Recreated around the world, paella is a classic dish heaped in the tradition that is so much more than bright yellow rice with a mussel or two stuck in the top!
In this class, we will discuss the variations of paella from around Spain, the types of rice available to us in North America, and the history of Paella.
Paella needs great stock, and the quality of the seafood is paramount to its success. We will take an in-depth look into making stocks at home, and create a traditional paella from start to finish.
And, while we are waiting for our stock to boil we will enjoy a few traditional tapas!
