Demo dish: Caponata, a Sicilian classic appetizer made with a combination of gently fried artichoke hearts or eggplant, celery, onion, fennel, and sweet and sour tomato sauce with pine nuts, raisins, and basil.

First Course: Ensalada de Cavolfiore Caldo:  Warm cauliflower salad with crispy prosciutto, fried capers, pine nuts, and mint, dressed with a hazelnut vinaigrette and garnished with shavings of parmigiano-reggiano cheese.

Second Course: Pollo con Rosmarino e Olive: Chicken with Olives and Rosemary – Juicy chicken thighs braised in white wine and tomato paste along with oil-cured black olives and fresh rosemary.
